The Role and Job Description
The successful candidate would be required to perform the following tasks:
Coffee Production
- Lead the day-to-day running of coffee production, managing our menu of 26+ lines of rotating single-estate and blend coffees, ensuring product quality and stock coverage for the operations team
- Facilitate daily cupping sessions and use statistical analysis to make decisions on roast optimisation to ensure adherence to quality standards
- Roast for production
- Liaise with the Head Roaster to plan & forecast coffee menu & oversee stock management in multiple warehouses
- Manage all aspects of programmed green coffee into the roastery including haulier bookings, organising warehouse drawdowns and releases from financiers
- Use physical and sensorial data in addition to roasting knowledge to set and develop individually tailored roast profiles for all our coffees
- Own Maintenance of air filtration system and Coffee Roasters; liaising with external contractors and managing the yearly maintenance programme
- Own End of Month Green Stock Count - Submit EOM to Finance team in a timely and accurate manner
Quality Control
- Own day to day quality control ensuring all QC is taking place across green and roasted coffee, looking to seek ways to enhance the overall quality control programme, ensuring efficient, accurate, meaningful and actionable data-gathering & analysis. This includes green coffee at all stages of the supply chain and brewing finished products across multiple brew methods.
- Own calibration and maintenance on all production grinders. calibrating and replacing burrs as forecasted by tracked usage & degradation
- Manage green coffee information to support creation of assets for new coffee launches (PDP/Coffee Cards) including gathering key information about coffees across language barriers
Management & Training
- Directly manage the coffee ops team, maintaining team motivation and delivering the day's production.
- Train new roasters in operating our Loring S70 Peregrine Roasters, covering manual roasting, recipes, and all maintenance tasks
- Foster a high level of integration and communication with other departments to ensure all issues relating to quality are analysed and resolved efficiently and thoroughly
- Support the BRCGS and Organic Certifications through both internal and external audits
- Assist the Senior Coffee Production Manager in delivering Coffee Classes to the wider business on a rotational basis
- Deputise for the Line Manager when needed
Please note this role does require some heavy lifting
- At least 3 years coffee roasting experience (ideally on a Loring)
- SCA Certificates or equivalent in Roasting, Sensory and Green Coffee (Desirable)
- Team management and training experience
- Google Sheets/Excel proficiency
- Experience in green/roasted coffee and water quality control
- Extensive experience with Cropster both roasting intelligence and inventory management
- Stock management and product planning experience highly valuable
- Able to show initiative and be adaptable to changing daily requirements
- Sample roasting experience
